Ugh anyway, these parfaits take a couple of steps to make but trust me they’re worth it.
Not only are they super delicious, but you actually know exactly what’s in them (and it’s all FOOD!)
I start with a layer of coconut milk chia seeds pudding.
Then top that with some small-batch fig jam and a layer of greek yogurt. And finally I garnish with homemade maple almond butter, a bit more fig jam and some coconut flakes for good measure.
Make them in a small mason jar and they double as a great mobile breakfast/snack.
Fig Jam Chia and Yogurt Parfaits Recipe
Makes 4
Ingredients
FIG JAM
- 8 medium figs
- 1 tbsp lemon juice
- 1/2 cup honey
CHIA PUDDING
- 1/3 cup chia seeds
- 1 cup almond milk
- 1 tbsp honey
- 1 tsp vanilla
- pinch salt
MAPLE ALMOND BUTTER
- 1 cup of raw almonds
- pinch salt
- 1/2 tbsp of vanilla extract
- 1/2 tbsp maple syrup
- 1 tsp coconut oil
OTHER INGREDIENTS
- 1 quart non-fat vanilla greek yogurt
- 1/4 cup coconut flakes
Instructions
- Prepare chia pudding. Whisk together all ingredients, cover, and chill for 2-3 hours.
- Prepare a small batch of fig jam. Place the figs, sugar, honey, and lemon juice in a large sauce pan and heat over medium-high heat, stirring to combine as the sugar melts. Bring to a boil, then reduce heat to medium and cook until thickened about 50-60 minutes. Be sure to stir the pan often to prevent sticking and/or burning, especially as the mixture thickens. Remove from heat, stir in the vanilla, and cool completely.
- Prepare maple almond butter. Preheat oven to 350 F. Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and spread out the almonds on top. Roast almonds for 10 mins, until slightly golden. Pour the roasted almonds into the bowl of a food processor. Add salt and process until smooth and creamy, scrapping down the sides of the bowl as needed. Add vanilla, maple syrup, and coconut oil and process again just to combine.
- Layer the parfaits and top with coconut to garnish.
